Ingredients:
750 gms spinach [boil and puree]
1 tbsp butter
1 tbsp maida
Salt to taste
Pepper to taste
4 cups milk
4 tbsp fresh cream
Method:
Melt the butter in a pan, remove it from fire and add maida in it stirring all the time.
Add milk and stir well over a gentle heat, until the mixture is smooth.
Bring to the boil, stirring all the time.
Add spinach puree and cook gently until the soup is hot again.
Season with the salt and pepper.
Top with a fresh cream and serve hot.
