Rogan josh, is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Roughan means “clarified butter” or “fat” in Persian, while juš gives the figurative meaning of “intensity” or “passion” and ultimately derives from the verb jušidan meaning “to heat”. Rogan josh thus means cooked in oil at intense heat.
Ingredients:
500 gms Mutton [with bones]
4 onions [chopped]
1 tbsp red chili powder
1 tbsp ginger-garlic paste
2 tsp cumin seeds
1 bowl oil
1 tbsp red chili paste
1 tsp haldi
Salt to taste
2 tbsp dhaniya-zeera powder
3 tomatoes [chopped]
1 tbsp rogan josh
20 gms coriander leaves
Method:
Take the cleaned meat in a vessel add red chili paste, ginger-garlic paste mix well and marinate it for 2 hrs.
Take oil in a pan put onion, cumin seeds, tomatoes, haldi, red chili powder, dhaniya-jeera powder, salt and mix well.
Add mutton and stir well, add water and let it simmer.
Mix rogan josh in some water and add into the mutton and cook till mutton gets tenderize.
Garnish with chopped coriander and serve hot.
