This is traditional recipe of Nagpur which belongs to Saoji society. This is a good variation for people who love to eat spicy food.
Ingredients:
Hara Masala:
1 bowl coriander leaves with stands
1 bowl spinach
1 cup pudina
1 inch ginger
1 pod garlic
1 tbsp zeera
MAKE A PASTE
4-5 big onions [chopped]
salt to taste
1.5 tbsp coriander powder
1 tsp haldi
5-6 bhiwapuri whole red chillies saute in oil cool it and make powder
2 bay leaf
1 tbsp Goda masala
1 kg mutton
1 hand full of green coriander leaves
Garam Masala
1 tbsp dhaniya seeds
4 cloves
8 cardamoms
8 peppercorns
4 mace
1 tsp shahzeera
1/2 tsp grated nutmeg
saute in a little oil, cool it down and grind them all together.
Double Masala
8-10 large cinnamon sticks
1 tsp grated nutmeg
1 tbsp shah zeera
4-5 cloves
5 green cardamom
2 black cardamom
5-8 peppercorns
2 star anise star
2-3 stone flower
1 tsp mustard seeds
1 tsp zeera
2 bay leaf
grind together and make powder
Sautara:
1 hand full of new rice [raw]
3 tbsp daliya
1 tbsp jawar
1 big onion
3-4 tbsp ground nut
saute in a bit of oil properly and make paste
Method:
Take oil in a pan. add bay leaf and onions and saute till golden brown.
Add Hara masala. When you see the oil is getting separate add Mutton.
Add bhiwapuri red chilli powder [they u have sauteed], coriander powder, haldi, salt, garam masala, goda masala, and sautara.
let the Mutton cook on slow flame add a bit of water when u see the oil got separate add more water so that gravy dont burns.
When the mutton is cooked add Double Masala and coriander leaves. and let it cook for 15 mins more.
Serve Hot and Enjoy.
[P.S. you can replace mutton with chicken and lessen the quantity of chillies and cinnamon sticks if u want less spicy]
