Our version of the ultimate feel-good food, Homemade Chicken Noodle Soup is chock-full of seasonal vegetables like leeks, carrots, celery, and onions. Slowly cooking a whole chicken, fragrant herbs, and fresh vegetables in chicken broth rather than water imparts a rich flavor to this soup.
Ingredients:
4 tbsp Butter
1 onion [diced]
1 carrot [diced]
4 celeries [diced]
3 cloves garlic [chopped]
1 bowl boiled boneless chicken shreds
1 ½ liter chicken stock or water
1 ½ cups parsley [chopped]
2 tbsp fresh thyme [chopped]
Salt to taste
Pepper to taste
250 gms raw flat noodles
Method:
Heat butter in a sauce pan add onion, carrots, celery, garlic, parsley and sauté.
Add chicken, thyme and chicken stock and boil until vegetables gets cooked.
Add salt and pepper and simmer more.
Add some more stock and boil it.
Add noodles and boil for more 10 mins.
Serve hot.
