This cake is sensational in both taste and appearance.
Ingredients:
• 250g butter
• 375g plain flour
• 250g buttermilk
• 600g caster sugar
• 6 eggs
• 2 tbsp red food colouring
• 3 tbsp high quality cocoa powder
• 1 tsp vanilla extract
• ½ salt
• 1 tsp bicarbonate of soda
• 1 tbsp vinegar
Frosting:
• 350g white chocolate
• 400g cream cheese
• 250g butter
Preparation time: 45 mins
Cook time: 25 mins
Method:
– Preheat oven to 170 degrees/Gas mark 3 and rub butter around the three cake tins (20cm) with a sprinkle of flour.
– Soften the butter and cream it with the sugar in a big bowl, whisking in the eggs one by one.
– Add the food colouring, cocoa, vanilla and salt.
– Slowly fold in the flour, alternating it with the buttermilk and then mix the vinegar and bicarbonate of soda together before also adding to the mixture.
– Pour equally into the cake tins and bake for 25 minutes.
– For the frosting melt the chocolate, then whisk the cream cheese until fluffy. Whisk in the white chocolate (should be warm, not hot) and butter until forming soft peaks.
– Now you can fill and top the cooled cake with the delicious frosting…saving the spoon to lick of course!
